Great Pico De Gallo

Ingredients: 3 Medium Tomatoes, Diced ¼ Large Onion (red, if you can get it) 1 1/2 Tsp Fresh Cilantro, Minced ¼- ½ Anaheim Chili, Minced 2 Tbsp Lime Juice 2 Tsp Mexican Chili Powder ¼ – ½ tsp Sugar 1 Large Clove Garlic, diced, or pressed Salt to taste Instructions: 1. Dice your tomatoes finely, place in a colander to drain 2. Cut your remaining vegetables and place in a medium bowl. 3. Add Tomatoes, and remaining ingredients to vegetables and mix well. 4. Let sit for ½ hour or more for best flavor

Ingredients: 1 c Rice 1 Tbsp Butter 1 Sm Onion, Diced 1 C Broth 1 8-oz Can Tomato Sauce 1 Tbsp Mexican Chili Powder Directions: 1. Saute Rice and Onion in Butter until brown 2. Add Broth, Tomato Sauce, and Chili Powder and stir well 3. Bring the mixture to a boil, then reduce to a simmer. Cover and simmer for 17-20 minutes -OR- Use a Rice Cooker or Instant Pot using the manufacturer's directions

Ingredients: Sauce: 1 16-oz can Tomato Sauce 1 Tbsp Hart's Desire's Mexican Chili Powder Enchiladas: 1 ½ lb cooked meat (leftovers baby!) 1 4-oz can Diced Green Chilies 1 small Onion 1 2.25 oz can Sliced Olives 4 Tortillas 1 Lb Cheese 4 oz whole Green Chilies Directions: 1.
