Enchiladas (& Homemade sauce!)

Ingredients:

Sauce:

1 16-oz can Tomato Sauce
1 Tbsp Hart's Desire's Mexican Chili Powder

 

Enchiladas:

 

1 ½ lb cooked meat (leftovers baby!)
1 4-oz can Diced Green Chilies
1 small Onion

1 2.25 oz can Sliced Olives
4 Tortillas
1 Lb Cheese

4 oz whole Green Chilies

 

Directions:

1. In a saucepan, combine Tomato Sauce, and Mexican Chili Powder. Simmer for 5 minutes.
2. Put ¼-1/3 cup of the Enchilada Sauce in the bottom of a 9x9 Baking Pan, and spread it out.

3. Working quickly, Lay 1 Tortilla in your pan, adding ¼ of each of the Meat, Onion, Diced Chilies and Sliced olives in a row near one edge, and top with a palmfull of cheese.
4. Roll up your Tortilla around them.
5. Repeat with remaining Tortillas.

6. Lay ½ of a whole Green Chili on top of each Enchilada, Pour the rest of your sauce and remaining cheese over the top

7. Bake in a 350 oven for 45 minutes, or until cheese starts to brown.
