Tomato Basil Pasta

Ingredients:

1 Tsp Greek Seasoning
2 Cups tomatoes diced (8 oz grape, sliced)

4 Cloves garlic minced

8 ounces mushrooms sliced

1 Medium Onion, chopped

1/4 Cup pine nuts, toasted (optional)

fresh basil, a handful, cut chiffonade

3 Tablespoons olive oil

Kosher salt and black pepper to taste

Directions:

1. In a large saute pan, heat oil over medium heat. Add onions and mushrooms, stirring constantly, about 3-4 minutes.
2. Add garlic  and Greek Seasoning and stir another minute or two, just until fragrant. 

  1. Add tomatoes and Greek Seasoning and continue stirring until they wilt. 
  2. Take off heat, Toss with fresh basil and toasted pine nuts. Season to taste with kosher salt, pepper.
    5. Spoon over hot pasta and sprinkle some Parmesan on top for a garnish
