Homemade Eggnog!

Ingredients:
2 C Whole Milk
1 C Cream
5 large Eggs, Seperated
¼ C Sugar
½ Tsp Chai Spice
1 tsp Vanilla extract
1 tsp Rum Extract
½ C Cream, whipped (optional)
Directions:
1. Mix egg yolks until they turn a light sunny yellow
2. Stir in Sugar, and Chai
3. If using whites, whip to stiff peaks, if using Whipped Cream, whip to stiff peaks
4. In a pan, heat milk and cream until just steaming
5. Temper Egg Yolks (pour 1 c hot dairy mixture into them gradually and mix until fully combined
6. Pour Egg yolk mixture back into pan, stirring constantly and heat until 165 degrees and thickening
7. Take off heat, Add Extracts, and fold in Either Whipped EggWhite, or Cream
8. Serve hot or chilled with a garnish of Chai on top.
Alternative:
Instead of Rum Extract, Add up to 2 ½ oz of Rum, Bourbon, or mix of the two for a tipsy Nog.
