Kokkari Sauce

With a food chopper, or small blender, this whips up in bare minutes, and will take your next meal to the moon!!

A customer recently asked if I had ever heard of this marvellous stuff, and I had to admit that I had not!!! Well, that usually starts some experimentation, and that was some VERY tasty experimentation, let me tell you!!

This stuff is fantastic on Chicken, Pork, and Fish of all stripes. Garlicky, and smooth, it's got a pleasant vinaigry/salty bite from the capers, and the olive oil and lemon juice just top it off as a true winner.

I put a good deal of pepper in mine, because... well, it's me. I LOVE pepper!!

Ingredients:

6 tbsp extra virgin olive oil -OR- 1/4 c +2 Tbsp (almost 1/3 c total)
2 tbsp fresh lemon juice
2 tsp capers
1/4 of 1, 2" wide shallot
1 large clove garlic 
1 tsp fresh minced parsley (I guess-timated after knowing about how much minced parsley = 1 tsp after it's minced)
1/2 tsp dried oregano
sea salt and pepper to taste
Instructions:

1. Add Capers, shallot, garlic, parsley, and oregano to a small food-chopper and pulse several times until well chopped
2. Add the rest of your ingredients and pulse several times, until relatively uniform in color.
3. To use as a marinade, add a little more salt, and let the meat marinade in it for 1/2 hour before use
4. To use as a sauce, let sit 1/2 hour before use for flavors to mingle well.
