Keto-Friendly Protein Balls

I've been playing in the kitchen again (big surprise, right?) and have been able to perfect this beauty of a recipe for Keto-Friendly Protein bites. I love the silkiness of the texture, mixed with a little crunch of sunflower seed, it's the perfect little on-the-go snack that also satisfies the belly.

For the protein powder, (Ok, I've fallen in love with using "odd" ingredients) I love the nutrient profile of the nutrilite. All those wonderful amino acids and the goodness that comes with them when you pull from a variety of plant sources, without a bunch of sugars or starches. I don't get a heavy Stevia taste from it either, which is fantastic, seeing I pretty much hate Stevia.

Ingredients:
    1/3 C Sunflower Seeds
    1/3 c Almond Butter
    1 Tbsp Coconut Oil, or Butter

    2 Tbsp Cocoa Powder
    1 Scoop Nutrilite All-Plant Protein Powder

    1 Tbsp Keto Friendly sweetener Syrup
    1/2 Tsp Vanilla

Directions:

1. Mix Sunflower Seeds, Almond Butter, and oil in bowl and microwave until fats are melted
    
2. Mix in Cocoa and Protein Powder until smooth

3. Mix in remaining ingredients, and portion into 1 tbsp balls (I like using a cookie scoop for this)
