Homemade Chai Spiced Eggnog

Ingredients:
2 C Whole Milk
1 C Cream
5 large Eggs, Seperated
¼ C Sugar
½ Tsp Chai Spice
1 tsp Vanilla extract
1 tsp Rum Extract
½ C Cream, whipped (optional)
Directions:
- Mix egg yolks until they turn a light sunny yellow

Stir in Sugar, and Chai
3. If using whites, whip to stiff peaks, if using Whipped Cream, whip to stiff peaks - In a pan, heat milk and cream until just steaming

Temper Egg Yolks (pour 1 c hot dairy mixture into them gradually and mix until fully combined
6. Pour Egg yolk mixture back into pan, stirring constantly and heat until 165 degrees and thickening - Take off heat, Add Extracts, and fold in Either Whipped EggWhite, or Cream
- Serve hot or chilled with a garnish of Chai on top.
Alternative:
Instead of Rum Extract, Add up to 2 ½ oz of Rum, Bourbon, or mix of the two for a tipsy Nog.
