Garden fresh fritters

Ingredients:

2 cups grated kohlrabi, zucChini, or summer squash
½ c diced onion
½ c diced green onion
2 Tbsp fresh or 1 Tbsp dry Dill Weed
1 clove garlic
3/4 tsp Greek seasoning
1 tsp lemon zest
1/2 tsp kosher or equivalent salt of your choice
2 eggs 
1/3 cup flour
1-2 tbsp oil


Directions: 

  1. Grate vegetable into a clean tea-towel or nut bag. (for Kohlrabi, cut into handle-able wedges first without peeling)
  2. Twist the towel tightly to squeeze all the juice out.
  3. Add vegetables and all other ingredients to a bowl and mix well. Look for a thick damp but not wet consistency.
  4. Add more flour if the texture is wet, 1 tbsp at a time.
  5. Add oil to and heat a griddle to medium / medium-high heat.
  6. Form “dough” into palm-sized fritters, and flatten once they're in the pan.
  7. Cook until golden on both sides.
