Greek Style Easter Roast


Ingredients:

      1 Roast, any kind

    ½ - 1 tsp Kosher Salt / Lb 

    2 tsp Coarse ground Pepper/ Lb

    1 Lg Cloves Garlic, Finely sliced / Lb

    2 tsp Hart’s Desire Greek Seasoning / Lb

    1 tbsp olive oil / Lb

    1/2 stick butter, softened

   

Instructions: 

  1. Mix Greek Seasoning and Olive oil in a bowl and set aside.
  2. Slice your butter in to thin pats or sticks
  3. Slice your garlic, thinly
  4. Put Salt and Pepper in a small bowl. Get out a small tipped spoon for them.
  5. With a paring knife cut a slit in your roast, no more than an inch deep. Stuff with a little salt, a little pepper, and 1 slice of garlic. Plug well with butter .
  6. Do this at 1-inch intervals all over the roast.
  7. Brush entire roast with Olive oil mix
  8. Roast at 375  for 30 min to brown, and then down to 225 for 30-45 minutes per pound to desired internal color. (use a meat thermometer to determine done-ness. 135-rare to 160-well done)
