Greek Pasta Salad


Ingredients:

8 oz Rotini Pasta
1 Cucumber, sliced and quartered
1 pt Grape Tomatoes, halved
4 oz Feta Cheese
1 sm red bell pepper
2 tbsp banana pepper rings, OR 2 Pepperoncini’s, seeded
8 Kalamata Olives
1 sm red onion
¼ c Olive Oil
1 Tbsp Balsamic Vinegar
2 Tbsp Lemon Juice

1 Tbsp Greek Seasoning

Directions

    1. Prepare pasta, cooking until just barely tender, drain into a colander.
    2. In a food processor, combine Bell Pepper, Seeded Pepperoncini, Kalamata Olives, and onion, and pulse until finely chopped
    3. Add Olive Oil, Vinegar, Lemon Juice and Greek Seasoning, process until smooth
    4. In a large bowl, mix pasta, and sauce, mix well. 
    5. Add in cucumber, tomatoes, and Feta, and toss until just combined.
    6. Let sit, covered in the fridge for ½ hour before serving.
