Greek Pasta Salad
Ingredients:
8 oz Rotini Pasta
1 Cucumber, sliced and quartered
1 pt Grape Tomatoes, halved
4 oz Feta Cheese
1 sm red bell pepper
2 tbsp banana pepper rings, OR 2 Pepperoncini’s, seeded
8 Kalamata Olives
1 sm red onion
¼ c Olive Oil
1 Tbsp Balsamic Vinegar
2 Tbsp Lemon Juice
1 Tbsp Greek Seasoning
Directions
- Prepare pasta, cooking until just barely tender, drain into a colander.
- In a food processor, combine Bell Pepper, Seeded Pepperoncini, Kalamata Olives, and onion, and pulse until finely chopped
- Add Olive Oil, Vinegar, Lemon Juice and Greek Seasoning, process until smooth
- In a large bowl, mix pasta, and sauce, mix well.
- Add in cucumber, tomatoes, and Feta, and toss until just combined.
- Let sit, covered in the fridge for ½ hour before serving.
