Greek Chicken

 

Ingredients:

3 lb Chicken in pieces

¼ C Olive Oil

1 Tbsp Hart's Desire Greek Seasoning

3 Cloves Garlic

6 Strips Lemon Peel (about 1 Tbsp grated zest)
1 Tbsp Lemon Juice

1 Tsp Salt (optional)

Directions:


*Preheat oven to 425, rack about 6” from broiler


1. Mince Lemon Peel, and Garlic

2. Combine Oil, Greek Seasoning, Garlic, Lemon Peel, and Salt, and stir well.

3. Pour marinade into bag with Chicken, escape the air, and refrigerate 30 minutes – 2 hours. (or up to overnight if omitting salt)
4. Place Chicken skin-side up in an oven-safe container with space between each piece, and pour the rest of the marinade over the top.
5. Bake for 30-35 minutes

6. Remove from oven, spoon juices over the top, and then place under the broiler for 3 minutes, or until skin is golden brown.

7. Remove from oven and transfer the chicken to a shallow platter.
8. Stir Lemon Juice into pan juices and then spoon over chicken before serving
