Cajun Potato salad

Ingredients:
2 ½ lbs red / yellow potatoes
8 oz Andouille sausage, diced
½ of a sweet onion, diced
½ of a red bell pepper, diced
½ of a yellow bell pepper, diced
1 clove garlic
salt and pepper to taste
1 ½ Tbsp Harts Desire Jambalaya Mix
1 Tbsp balsamic vinegar
Instructions:
1. Cook, cool and slice Potatoes (peel if you like)
2. Toss Potatoes with Balsamic Vinegar
3. Saute onions, garlic, sausage, and bell peppers together until sausage is browned and onions are tender.
4. Combine cooked, diced potatoes, sausage-onion mixture and spices together.
5. Serve immediately warm or chill and serve cold for later.
