Greek Casserole

Ingredients:

 

Meat Mixture

1 Lb cubed Meat

1 small onion, sliced

½ tsp Greek Seasoning

1-2 Tbsp Olive Oil

 

Gravy / Soup base

2 C heavy Cream

1 lg clove Garlic

½ Tsp Greek Seasoning

1 Tbsp Flour

 

What else?

2 C chopped leafy Greens (spinach, kale, etc)

½ Pint Cherry/ Grape Tomatoes sliced in 1/2's

1 Small Zucchini

4 Oz Feta Cheese, cubed, or crumbled

 

Directions:

1. Cut up meat and onions, brown in 1-2 Tbsp Olive oil with ½ tsp Greek Seasoning… Set aside

2. Using the same wide frying pan as the meat, add Cream, Garlic, ½ tsp Greek Seasoning and reduce on high heat until thick. Watch it, it'll want to boil over, stir often

3. Once Cream is thickened, sprinkle flour on top evenly and stir in. Set this aside, usually in a measuring cup for easy pouring.

4. Layer your Leafy Greens, Meat mixture, Zucchini, and Feta in a 9x9 casserole.

5. Pour soup base over the top, and now add your sliced Tomatoes on top artfully

6. Bake at 350 until bubbly, usually 30-60 minutes.
