Carmelized Pears with Pumkin Spice

Posted by Natalie Jean on

Ingredients:

2 Pears

¼ c Water

¼ c Sugar

½ c Cream

1/8 Tsp Pumkin Spice + some for garnish

Vanilla ice cream (optional)

Directions:

1. Pour water into a frying pan with sides, turning heat to medium-high.

2. Pour sugar into a heap in the middle of the pan, and let it dissolve. Let the mixture come to a high simmer/low boil

3. Slice pears in half, and core. Cut off flower end, keep stem.

4. Place pears face-down in the pan, turn heat down until you get an even simmer with small bubbles. Cover for 10-15 minutes, or until pears are tender.

5. Remove cover, and increase heat to an active boil without boiling over, stirring, until sauce turns a deep, rich brown, not quite coffee colored.

6. Remove from heat and add cream, keep the contents of the pan moving until the boil reduces to near calm.

7. Bring back to heat until caramel is desired color

8. Take off heat, add Pumkin Spice and incorporate.

9. Serve cut-side up next to vanilla ice cream. Drizzle with sauce, and dust with Pumkin Spice for garnish.
