it smells so good - welcome 2022

I love the smell of Garam Masala when it's being made. You see, after I measure out the spices, the hard seed spices all get toasted. There's a magic that happens when dry heat hits these spices, the whole place blooms with an amazingly sweet, savory smell with a hint of earthiness that can only come from Coriander, Cumin, Cardamom, peppercorns and cloves. The toasting process blooms so many hidden flavors, it adds a richness to the flavors that can't be found any other way. This is why I'm addicted. After those are mixed with the rest of the spices...
